What is hard cider?
Hard cider is a fermented alcoholic beverage made from pressed apple juice — the yeast turns the apples' natural sugars into alcohol. Most ciders land between 5% and 8% ABV. At Ilwaco Cider Co we press Pacific Northwest fruit and ferment small batches in-house, from bone-dry to fruit-forward and barrel-aged.
What's the difference between dry and sweet cider?
A dry cider is fermented until almost all the sugar is gone—crisp, light and not sweet. Semi-sweet and fruit ciders keep more residual sugar and taste rounder. Our lineup runs the whole range.
Is your cider gluten-free?
Cider is made from apples, not grains, so it is naturally gluten-free. Our core ciders contain no gluten ingredients. A few specialty or seasonal batches use added ingredients for flavor—if you have a serious sensitivity, check the can or ask us at the taproom before you pour.
What makes Pacific Northwest cider special?
The PNW is apple country. Cool nights, coastal air and a long growing season give Northwest fruit bright acidity and depth that make for expressive, food-friendly cider. Being at the mouth of the Columbia River in Ilwaco, Washington, we build coastal character—hops, botanicals and sea air—right into the glass.
How much alcohol is in your cider?
Most of our ciders are between 5.5% and 7% ABV—sessionable and easy-drinking. Bigger seasonal releases like our rum-barrel-aged Imperial Wassail run higher, up to about 8.2% ABV. Every can lists its exact ABV.
Do you ship cider, and where?
Alcohol shipping is regulated by state, requires an adult (21+) signature on delivery and isn't legal everywhere—so availability depends on your address. We currently ship to Washington and Oregon.
Is the taproom family- and dog-friendly?
Yes. Our taproom at 116 Spruce St E in Ilwaco, WA welcomes families and leashed, well-behaved dogs. We're open seven days a week with live music, food and games — a social hub as kick-ass as our community. Check the Taproom page for current hours.
Can I buy a gift card or join the Crafters' Club?
Absolutely. Gift cards and Crafters' Club memberships are available on our Shop page. The Crafters' Club is our membership for regulars—cider, perks and community for ciderheads and good-timers alike.
